Recently, Girl Camper Guide, Ginny McKinney, was interviewed by WSAZ News Channel 3. They featured her for the creative way she cooks in her R-Pod 196 trailer. Ginny is a camper that wants to assemble, cook her meal and get it on her plate in the fastest amount of time. She loves to go off on adventures, spend time writing for her blog, and the page she manages for Girl Camper. Prepping ingredients and is not where her time is best used. What Ginny focuses on are meals made of ingredients from the store that are pre-made, pre cooked and easily assembled into a tasty meal while she camps.
Assembling Her Creation
In her debut recipe, Ginny has created Spiced Creamy Chicken enchiladas. Using rotisserie chicken, tortillas, jarred Alfredo sauce, spices and shredded cheese. What could be easier! Quickly cooked in her campers microwave for 2 minutes, then served along with a salad.
Besides this quick and easy meal, Ginny also created a delicious sweet treat for you. French toast roll up made in a skillet with melted butter and pan fried. Using flattened pieces of white bread, sweetened cream cheese spread and cinnamon sugar.

Quick and Easy Creamy Chicken Enchiladas
Slice rotisserie chicken into 1/2 to 3/4 cup portions. Place chicken on flour tortilla, top with a heaping tablespoon of Alfredo Sauce from a jar. Add 1/4 cup shredded Mexican cheese blend, add jalapeños for extra spice. Roll up and place in a microwave dish, seam side down. Top with several tablespoons of Alfredo sauce with 1/2 to 1 tsp hot taco seasoning and extra cheese. Microwave till cheese and sauce are bubbly…1 to 1.5 minutes. Garnish with shredded lettuce. Optional toppings: chopped tomato and diced avocado.
Stuffed French Toast Roll Ups
Trim crusts from white bread, flatten bread on a cutting board, spread with a tablespoon of Honey Pecan Cream Cheese spread. Roll up tight, dredge the stuffed bread roll in a beaten egg, then roll in cinnamon sugar. Cook in a pan with melted butter until all sides of the roll up are golden brown. Once finished remove the roll up from the hot pan and place on a paper towel, one minute, to soak up any extra butter. Sprinkle with a bit of the left over cinnamon sugar and serve. This is something kids can help with. They love to smash and spread and roll and dip. Mom can fry!
