One of the biggest misconceptions about small campers is that you can’t really cook in them. After spending time camping in a nuCamp TAB 360 CS, I can tell you that’s simply not true. Plus, I’m going to show you two yummy camping breakfast recipes.
At Girl Camper Camporee at Sun Outdoors Rocky Mountain in Granby, Colorado, I challenged myself to cook breakfast for 20+ women using the outdoor kitchen in the TAB 360 CS. The result? Two crowd-pleasing breakfasts that were easy to prepare, simple to clean up, and proof that great meals don’t require a giant kitchen.

Why I Love Cooking Outside
One of my favorite features of the TAB 360 CS is the clamshell kitchen.
There’s something special about making breakfast outside while the campground wakes up around you. You can enjoy the fresh mountain air, stay connected to your campsite, and avoid heating up the interior of your camper.

Breakfast #1: French Toast Roll-Ups
If you’ve never made French toast roll-ups, prepare to become very popular at your next campout.
What makes this breakfast so much fun is that everyone gets to customize their own.
Ingredients
- White sandwich bread
- Eggs
- Milk
- Cinnamon
- Vanilla extract
- Nutella
- Peanut butter
- Fresh fruit
- Cream cheese
- Cinnamon sugar mixture
Instructions
- Remove the crusts from the bread.
- Flatten each slice with a rolling pin.
- Set up a filling station with several options.
- Let everyone choose their fillings and roll up their bread.
- Dip each roll-up into a French toast batter made from eggs, milk, cinnamon, and vanilla.
- Cook on a lightly greased griddle until golden brown.
- Roll in cinnamon sugar while still warm.

The next morning, I needed something filling enough to fuel a day of activities.
Breakfast hash is one of my favorite camping meals because it’s flexible, forgiving, and incredibly satisfying.
Ingredients
- Dehydrated hash browns
- Spam (regular or maple flavor)
- Eggs
- Shredded cheese
- Bell peppers
- Onions
- Butter
- Salt and pepper
Instructions
- Rehydrate the hash browns according to package directions.
- Dice the Spam into bite-sized pieces.
- Brown the Spam in a skillet until crispy.
- Remove and set aside.
- Cook the hash browns in the same skillet until golden and crispy.
- Scramble the eggs separately.
- Add shredded cheese to the eggs and stir until melted.
- Combine everything back into the skillet.
- Season to taste.
Serve with:
- Salsa
- Hot sauce
- Sour cream
- Warm tortillas
This recipe stretches easily for large groups and can be customized with sausage, bacon, ham, or vegetables depending on what you have available.
Small-Space RV Kitchen Organization Tips
Cooking in a compact camper is all about organization.
The good news? A small kitchen can actually be more efficient because everything is within reach.
1. Use Vertical Storage
Take advantage of shelves and upper cabinets for spices, seasonings, paper products, and lightweight cooking essentials.
2. Group Similar Items Together
Keep breakfast items together, cooking utensils together, and cleaning supplies together. You’ll spend less time searching and more time cooking.
3. Prep Before You Arrive
Chop vegetables, portion ingredients, and organize meal components at home whenever possible.
4. Let Your Cooler Do Some of the Work
The TAB 360cs includes a convenient 45L cooler in the outdoor kitchen area. I like using it for frequently accessed items so I don’t need to open the main refrigerator constantly.
5. Choose Multi-Purpose Equipment
A griddle that spans both burners instantly increases cooking capacity while reducing the number of pans needed.
6. Clean As You Go
In a small space, clutter builds quickly. Washing a few items as you cook keeps the workspace clear and makes cleanup faster.
The RV Lifestyle Is About More Than Travel
One of the things I love most about RVing is that meals become part of the adventure.
Some of my favorite camping memories have happened around picnic tables, campfires, and outdoor kitchens. Sharing food brings people together, and it doesn’t matter whether you’re serving gourmet meals or simple camp breakfasts.
