Easy Jambalaya Recipe

I LOVE this easy Jambalaya recipe; it freezes well and keeps your icebox cold while traveling.  When you’re ready for dinner it’s easy to heat up in a crockpot for cool weather camping! 

It has cauliflower instead of rice making it a perfect meal for those on Keto, or you can add rice.  This makes enough to serve 12, I usually divide into 2-3 containers for trips.

1 pound of ground beef – browned and set aside

1 pkg. of smoked Kielbasa (with or without Jalapeno’s depending on your taste) sliced and browned, then combined with the browned meat.  

1 large onion or 2 small ones chopped 

1-2 tablespoon of olive oil as needed

1 Green pepper chopped & 1 Red pepper chopped 

1 Jalapeno chopped; seeds removed (optional)

2 carrots chopped & 2 sticks of celery chopped 

One medium head of Cauliflower chopped in small pieces 

Add olive oil to pan and sauté all the veggies 

Add meat and add 2 tablespoons of flour stir in (can be optional and add tomato paste 1 tbsp) to thicken.

2 cups of beef broth

1 tbsp. of parsley 

S & P 

Next, sauté veggies and add remaining ingredients, browned beef and kielbasa into a large pot

Add 2 teaspoons of chili powder, 1 can of 28 oz. chopped tomatoes and cook on low for 90 minutes.   Let cool, then pack into freezer containers.

Add shredded cheese if desired
