The ultimate cold day comfort food is soup and we love delicious cheese soup! Back in the day, some home cooks made this by just adding cubed Velveeta cheese to canned cream of cheddar soup! But it’s really easy to make from scratch and you get to control the quality of the ingredients. Below is a simple step-by-step method. This soup freezes well for up to three months, so make it ahead and reheat at the campground.
Ingredients
- Six strips of bacon
- One onion, chopped
- ¼ cup all-purpose flour
- 3 cups chicken or beef broth
- 3 cups milk or half and half
- 16 ounces shredded cheddar cheese
Method
- Cook bacon strips in a 4-quart Dutch oven pan on medium high heat.
- When crispy, remove strips and set aside.
- Sauté onion in the bacon grease.
- When the onions are translucent, add the flour and stir for several minutes, cooking it until it forms a roux.
- Add stock and stir with a whisk until it begins to thicken.
- You can blend it with an immersion blender at this point if you want a very silky texture.
- Add milk and bring mixture up to a boil, cutting the heat off when you see bubbles.
- Sprinkle the cheese in, stirring constantly.
- Serve in big mugs or bread bowls and top with the bacon.
Take It Up a Notch!
- Substitute six ounces of beer for six ounces of broth for added flavor.
- Serve your soup in a toasted, hollowed-out bread bowl for a tasty presentation.
- Add veggies, like broccoli, cauliflower or asparagus for a more well-rounded dish.
- Shred the cheese yourself because pre-shredded cheeses have additives you don’t want.
- Add a dash or two of your favorite hot sauce to spice it up.
- Garnish with bacon, homemade croutons, green onions or more cheese.
